
For a special someone’s birthday, the love of coconut inspired this massive cake, much of which is still sitting in my refrigerator! You can guarantee that if you bunk with us, you’re going to get fed, probably with sweets :)

This is a lot more cake than I intended to produce, but that’s what happens with a first-time recipe. Either too much or too little. Better to have too much I say!

6 layers of coconut cake on the inside, divided with 5 layers of coconut custard creme filling. Topped off with a cream cheese frosting and toasted coconut. whoa mama!

crunchy goodness. and so calorie free!

that’s what those grease spots mean, right?
